This time we brings you a fantastic recipe for spaghetti with zucchini rolls. It is a delicious and colorful vegan recipe, made with spaghetti, a little pink sauce and roasted zucchini with peppers. A dish with which you will surely want to repeat.
Ingredients to make Spaghetti with zucchini:
- 1 large zucchini unit
- 1 can of Peppers (small can)
- ½ pot of vegan cream
- 1 tablespoon of olive oil
- 1 pinch of Salt and Pepper
- 150 grams of Spaghetti
- 1 tablespoon parsley
- ½ dozen green olives
- 1 handful of raw sunflower seeds
How to make Spaghetti with zucchini:
- As this vegan recipe is with pasta, the first thing we will do is bring the water to a boil to cook the spaghetti.
- Take advantage and gather all the ingredients.
- Meanwhile, cut the zucchini into slices, you can use a mandolin to make the process easier. Reserve the largest strips, about 12, and cut the rest into julienne strips.
- Grill the slices on a hot griddle and set aside.
- Cut a small piece of pepper for each slice of zucchini that you have set aside and reserve.
- Blend the rest with the juice from the canand add the cream, oil and season with salt and pepper. The result should be a pink pepper sauce.
- At this point the water should be boiling and you can cook the spaghetti with a little salt. Meanwhile, form the zucchini rolls.
- To do this, spread out a slice of zucchini, sprinkle with a little parsley and place a piece of pepper and an olive on the tip.
- Roll up all the slices and take them to the grill.
- Make sure that the iron keeps the heat but without the flame and covered.
- Mix the pink sauce with the julienned zucchini and heat it in the microwave.
