Ingredients to make Black Pasta Cannelloni with King Prawns and Curried Vegetables:
FOR THE MASS

- 250 gr flour
- 2 ud squid ink (in bags)
- 2 gr fine salt
- 1/2 dl olive oil
- 3 ud eggs
FOR THE FILLING
- 3 medium carrots
- 1 large zucchini
- 18 u prawn (tails)
- salt and pepper
- Curry
FOR THE WILLOW
- 1 package cream cheese, San Millán type
- 1/4 l liquid cream
- 1/2 unit onion
- 1/2 dl cognac
How to make Black Pasta Cannelloni with King Prawns and Curry Vegetables:
- THE PASTA adds all the ingredients into the mixer and kneads until the walls are clean.
- Work well on the table adding more flour, if necessary.
- Wrap in cling film and leave to rest in a chamber for 5 hours.
- Cut the dough into three thick sheets, and roll out thin, elongated sheets on a floured table, to get 6 servings of cannelloni from the entire dough.
- Cook in boiling water for 2 minutes, and refresh in cold water.
- THE FILLING Peel and cut the carrots into thick julienne strip. Cut the unpeeled corvettes into thick julienne strips.
- Sauté the vegetables in virgin olive oil, add the salt, pepper and curry, leave al dente.
- Peel and lightly sauté the prawn tails.
- THE SAUCE Sauté the finely grated onion and lightly flambé with the cognac add the cream and let it reduce, season with salt and pepper, and pass through a thermo mix and Chinese.
- ASSEMBLY spread out a sheet of black pasta on the table, and on top are the vegetables and prawns, make a cylinder, being careful not to break the dough.
- Put the sauce base on a large richer plate, the cannelloni previously heated in the microwave, and decorate with black seeds and a drizzle of olive oil.
