Beans, beans, favas… with this recipe for white beans with chorizo and black pudding you will learn how to prepare a basic sauce so that you can later make a delicious vegetable stew. I have made an Austrian bean stew type but enriched. If you follow the step by step of this easy recipe you can vary it to your liking and make a dish that will surprise everyone.

- 1 unit of red paprika
- 3 garlic cloves
- 1 piece of pumpkin
- 1 unit of Tomato
- 3 units of Potato
- 2 units of Chorizo
- 2 units of black pudding
- 2 pieces of smoked bacon
- 1 unit of Chicora
- 3 units of pork sausage
- 1 teaspoon of hot paprika
- 1 teaspoon of sweet paprika
- 1 bay leaf
- 1 pinch of salt
- 1 jet of oil

- To start preparing this pinto bean dish. The first thing we have to do is prepare the ingredients
- To do this, keep in mind that you must soak the beans the day before preparation.
- Next, prepare all the vegetables. Start by finely chopping the garlic, pepper and onion.
- Remember that you can modify the amount of any of these ingredients if you consider it necessary.
- Also peel and chop potatoes, carrots and squash into bite-size pieces.
- Make sure the potatoes and carrots are medium in size.
- Repeat this process with the meat.
- Cut the chorizo, black pudding, sausages, bacon and history, all approximately bite size. As with the vegetables, you can modify any of these ingredients if you consider them necessary.
- Finally, grate the tomato and reserve.
- The first step in preparing pinto bean stew is to sauté the onion, pepper and garlic. Use a tall pot, such as an express pot, so you can finish all the cooking right there.
- Go stirring and when you see that the onion begins to turn transparent, add the grated tomato and stir everything well.
- After a few minutes, add all the meat to the sauce for the pinto bean stew.
- Go stirring everything and after another couple of minutes, add the rest of the vegetables.
- Stir so that the pieces, both vegetables and meat, are impregnated with the flavor of the sauce.

- Leave on the fire for 40 minutes or so, checking that the stew has enough water.
- Let cook until it reaches the desired point; you can leave the beans more or less thick by modifying the amount of water.
