Ingredients to make Enfrijoladas:
- Dip:
- 250 gr of freshly cooked beans
- 1/2 can of evaporated milk
- 1/2 chicken bouillon cube
- Salt to taste
- Filling:
- 700 gr of grated panel cheese
- 50 g finely chopped onion
- Exterior:
- 20 Tortillas Pamela cheese grated to taste to decorate
- Oil (for frying)
How to make Enfrijoladas:
- Prepare the filling by mixing the cheese and onion.
- In the blender, put the beans, the milk and the chicken bouillon cube, and blend until it becomes a homogeneous liquid paste.
- Later it is put to heat in a frying pan.
- Heat the oil in a separate frying pan, and when it is hot, place one tortilla at a time, heating it for approximately 3 seconds on each side and stack them on a plate to remove a little of the oil.
- Once you have finished heating the tortillas quickly (with great care because the tortillas are going to be hot) pass them over the bean sauce on one side and add the mixture of grated cheese and onion and roll up like tube and follow the same procedure with all the tortillas.
- Later, 4 enfrijoladas are distributed on each plate, bean sauce is bathed on top and grated cheese is added to decorate.
- It can be accompanied by roasted chilies, salads and fried potatoes and carrots.
