Ingredients to make Anchovies marinated in fruit juice and pepper:
- 24 small anchovies
- ¼ liter of mango or orange juice
- 1 lemon (its juice)
- A pinch of freshly ground black pepper
- A pinch of white pepper powder
- A pinch of cayenne pepper powder
- 6 tablespoons of sherry or apple vinegar
- 1 dl of extra virgin olive oil
- fresh parsley
- fine salt
- Coarse jumped
How to make Anchovies marinated in fruit juice and pepper:
- Clean the anchovies, gently holding each piece in the palm of one hand with the belly side up.
- At the same time, press the head of the anchovy with the tips of the index finger and thumb and carefully pull it so that, when detaching it by the neck to remove it, it has the guts attached to it.
- We wash them a little in cold water (to remove the blood) and clean each one with absorbent kitchen paper.
- Sprinkle them with coarse salt and leave them in the fridge for 15 minutes.
- In a large glass bowl, mix the juice of the chosen fruit with the lemon juice, the three types of pepper and the vinegar, and add the anchovies into this mixture, so that they are completely submerged in the marinade.
- Let stand 12 hours in the refrigerator, with the container closed with a sheet of transparent paper.
- To present them to the table, remove the anchovies from the marinade, sprinkle them with fine salt, fresh chopped parsley and drizzle them with extra virgin olive oil.
