- 3 units of Anchovies
- 6 grams of coarse salt
- 100 milliliters of olive oil
- 125 milliliters of apple cider vinegar
- 1 bunch of curly parsley
How to make fresh anchovies in vinegar:
- Prepare all the ingredients for the elaboration of the anchovies in vinegar.
- Clean the anchovies, removing the head and all its visors, remove the backbone and leave only the tenderloins wash very well.
- Place the anchovy tenderloins in a container; add the coarse salt and the apple cider vinegar.
- Cover with transparent paper and leave in the fridge for 5 hours.
- After 5 hours we remove the anchovies from the fridge and wash them with plenty of water.
- We put the loins back in a container and cover them with olive oil, garlic and parsley; we leave them in the fridge for 2 hours.
- Trick: To obtain a better flavor, it is recommended to leave them overnight.
