Ingredients to make fresh tuna marinated with wild asparagus:
- ½ kilo of tuna in thick slices
- 1 green pepper
- 1 fresh spring onion
- 1 tomato
- 3 deciliters of virgin olive oil
- 1 deciliter of cider vinegar
- Salt
- 8 wild asparagus
How to make Marinated fresh tuna with wild asparagus:
- Prepare the vinaigrette by mixing the vegetables chopped into brounoisse (small squares), the oil and the vinegar.
- We booked.
- Cut the tuna into thick cubes and marinate for 24 hours in the vinaigrette with the cut vegetables in a covered container in the fridge.
- The next day, we take it out of the refrigerator in advance so that it reaches room temperature.
- We serve the tacos slightly drained from this vinaigrette but with part of the vegetables as decoration.
- We place these tuna tacos on wild asparagus previously fried with very little oil and salt.
- If we do not like the tuna to be a little raw in the center, we can put the tuna cubes in the microwave for 30 seconds so that it cooks slightly in the center.
