Recipe for salmon medallions in zucchini sauce

Ingredients to make salmon medallions in zucchini sauce:

  • 500 g courgettes, cleaned and sliced
  • 800 g salmon slices, boneless and skin removed
  • salted

  • 40ml olive oil
  • 1 onion, finely chopped
  • 40ml white wine
  • 200 ml vegetable broth
  • the juice of a lemon
  • 1 tablespoon chopped fresh dill
  • steamed potatoes

How to make SALMON MEDALLIONS IN ZUCCHINI SAUCE:

  1. Boil the zucchini slices for three minutes in salted water.
  2. Drain and wrap each slice of fish with a slice of zucchini (reserve the remaining zucchini), season and fix with a toothpick. Brown the onion and the rest of the zucchini in the oil.
  3. Water with the wine and add the vegetable broth.
  4. Let cook over medium low heat for 20 minutes.
  5. Pass through the blender and season.
  6. Add the lemon juice. Book. In a frying pan, brown the salmon slices for eight minutes on both sides.
  7. Serve them with the zucchini sauce and steamed potatoes.
  8. Sprinkle with chopped dill.
