Ingredients to make Portuguese white salmon in the microwave:
- 1 red bell pepper
- 1 green pepper
- 1 onion
- 2 garlic cloves
- 80 ccs of olive oil
- 1 bay leaf
- 1 kilo of white salmon
- 120 grams of flour
- 300 grams of tomato, puree
- 1 sprig of chopped fresh thyme
- 1 teaspoon oregano
- 50 grams of black olives
- 50 ml of white wine
- 1 teaspoon of sugar
- 1 pinch of salt
- 1 pinch of pepper
- 1 lemon, the juice
How to make Portuguese white salmon in the microwave:
- The peppers are cut into wheels.
- The onion is cut first in the middle and then each half into slices.
- The garlic is crushed.
- Put everything together with the bay leaf in a wide microwave-safe casserole.
- Drizzle with the oil, cover and microwave on high power for 10 minutes.
- Stir halfway through and mix well.
- The salmon is sprinkled with a little lemon, salted and peppered and then drizzled in the flour, coating it well.
- The flour is what will give consistency to the sauce.
- Place the fish in the casserole, with the vegetables.
- Add the tomato puree (you can also use two very ripe tomatoes cut into slices), the sugar, the fresh thyme, the oregano, the black olives, the white wine, a dash of oil and cook uncovered in the microwave, for 14 minutes on full power.
- It should move when half of the cooking time has elapsed.
