Ingredients to make Maltese Macaroni:
- 200 grams of chopped onion
- 200 grams of minced pork
- 150 grams of mushrooms
- 2 chicken livers
- 1 bay leaf
- 350 grams of macaroni
- 50 grams of butter
- 1 pinch of pepper
- 100 grams of ball cheese and grated Parma
- 1 pinch of salt
- 500 grams of crushed natural tomato
- 200 grams of kidney fat
- 200 grams of minced beef
How to make Macaroni Maltese:
- Put the beef suet in a saucepan after washing and chopping it into very small pieces, add water, cover and leave it next to the fire until it has melted and all the water has been consumed; add the onion and meat and let it stew slowly for ten minutes.
- Add the mushrooms and livers, already cleaned and cut up, turn them over and add the tomato, a bay leaf, salt and pepper.
- Let it cook very gently for half an hour and reserve next to the fire.
- Cook the macaroni in plenty of boiling water, and after washing and draining well, prepare it in a deep refractory clay dish
- Put a batch of macaroni in the deep, cover with another batch of sauce and sprinkle with cheese, continuing like this until finished, covering the last one with abundant cheese and butter in little pieces, put in a strong oven and gratin.
