Ingredients to make Perch a la lyonnaise:
- 6 perch fillets, 120g each
- 350 grams of onions
- 1 pinch of salt
- ½ glass of milk or cream
- 1 tablespoon of breadcrumbs
- 1 pinch of pepper
- 1 teaspoon paprika
- 1 sprig of parsley
- 60 grams of butter
How to make Perch alla lyonnaise:
- Clean the fish fillets well, the parsley sprig and the onions to start preparing the perch in cream sauce recipe.
- Finely chop the parsley and cut the onions into julienne strips or thin slices. Besides, preheat the oven to 250 ºC.
- Melt 30 grams of butter in a pan and, before it completely melts, add the chopped onions and stir.
- Pour half a glass of hot water, cover and cook over medium heat until the onions are soft.
- Now, add the cream or milk cream, the paprika, salt and pepper to taste, stir and continue cooking the sauce with the pan slightly uncovered.
- Sprinkle with the chopped parsley and remove the sauce from the heat. Take a baking dish or tray, grease it with butter and place the perch fillets covered with the onion sauce inside.
- Sprinkle with breadcrumbs, distribute the remaining butter and bake the perch a la lyonnaise for 15 minutes.
- Serve the perch in a hot cream sauce and enjoy this delicious dish with roast potatoes or white rice.
