Ingredients to make Pig Ear Noodles:
- 2 pig ears
- 1 spring onion
- 1 head of garlic
- 250 gr. of noodles

- extra virgin olive oil Hojiblanca

- For the fry:
- 2 spring onions
- 2 garlic cloves
- 1 bell pepper
- 2 green bell peppers
- 2 teaspoons paprika
- ½ l. tomato sauce
How to make Pig Ear Noodles:
- Put in a casserole on the fire with plenty of water, a jet of oil and a pinch of salt.
- When it starts to boil, add the noodles and cook for 10 minutes.
- Drain and refresh them.
- Put water in the pressure cooker; add the spring onion, the head of garlic, a pinch of salt and the pig’s ears.
- Cover the pot and cook for 10 minutes after the steam begins to come out.
- Remove the ears, let them cool down and chop them up.
- Finely chop the spring onions.
- Peel the garlic and cut them into slices.
- Put everything to poach in a pan with oil.
- Clean the peppers cut them into fine julienne strips and add them to the pan.
- When it is well poached, add a couple of teaspoons of paprika, mix well, and add the tomato sauce and the pieces of pig’s ear
- Add the pasta to the pan, mix and serve in a wide dish.
- Tip: Pig ears admit many preparations.
- I advise you to prepare them in the same way as the octopus a fair.
