Noodles with clams in white sauce recipe

Ingredients to make noodles with clams in white sauce:

  • 400 grams of noodles
  • 1 medium onion
  • 1 kilo of clams
  • 500 ccs of dry white wine
  • 150 grams of mushrooms
  • 3 garlic cloves
  • 1 tablespoon chopped parsley
  • 100 ccs of liquid cream
  • 1 pinch of ground black pepper
  • 1 pinch of salt
  • 100 ml of olive oil
  • 2 hot chillies

How to make noodles with clams in white sauce:

  1. After soaking the clams in cold water, wash them well under the tap with cold water, rubbing them against each other.
  2. In a casserole, heat the olive oil and fry the onion and garlic all finely chopped over low heat, until they begin to take on color, add the filleted mushrooms, parsley, and white wine and, if desired, the chili peppers spicy.
  3. It is seasoned with salt and pepper.
  4. Let it cook for about 7 minutes.
  5. The well drained clams are incorporated.
  6. Cover the casserole and wait for the clams to open.
  7. Once open, remove the casserole from the heat, remove the clams that have not been opened and discard them, remove the rest of the clams and reserve them.
  8. Pass the sauce through the Chinese or potato mill, place it in a casserole and add the liquid cream.
  9. While the spaghetti will have been boiled in plenty of salted water.
  10. Heat the sauce again, stirring very well and add the clams, keeping the sauce warm but without reheating.
  11. Drain the spaghetti and add to the sauce.
  12. The whole is removed and served immediately.
