Ingredients to make Neapolitan Macaroni:
- 300 grams of Macaroni
- 150 grams of Mozzarella
- 1 jar of crushed tomato
- 1 tablespoon butter
- 2 zucchini
- 1 onion
- 1 clove garlic
- 1 handful of aromatic herbs (oregano, thyme and parsley)
- 1 bay leaf
- 50 grams of flour
- 150 milliliters of olive oil
- 1 teaspoon salt
How to make Neapolitan Macaroni:
- To make the Neapolitan sauce, put a splash of oil in a casserole, the tomato, the peeled and chopped onion, the garlic clove, the bay leaf and the sprig of aromatic herbs.
- Cook over low heat for 25 to 30 minutes and when the sauce is very concentrated, remove the herbs, bay leaf and garlic, season and reserve.
- On the other hand, cut the zucchini into slices, season, pass through flour and fry in abundant oil. We put them on kitchen paper to release excess oil and reserve.
- The slices will allow us to assemble our Neapolitan pasta dish more easily, but depending on the mold, we can also make sliced fried zucchini.
- Next, we cook the macaroniin the traditional way with boiling water and salt.
- When they are cooked, drain and put in a bowl, add the butter and stir well so that it melts into the pasta.
- We preheat the oven to 170ºC and in a dish we begin to prepare our macaroni dish by placing alternate layers of pasta, zucchini, mozzarella discs, tomato sauce, ending with a layer of cheese.
- Bake au gratin in the oven for 15 minutes or until we see that the surface of our Neapolitan macaroniis golden and slightly crisp.
- Let rest for a few minutes and serve this delicious dish of macaroni with sauce.
