Ingredients to make Monkfish with pineapple:
- 1/2 kg of monkfish in fillets
- 5 pineapple slices in syrup
- 3 onions
- 5 garlic cloves
- 1/2 glass of vinegar

How to make Monkfish with pineapple:
- Peel the onions and cut them into strips.
- Reserve them, peel the garlic cloves and cut them into slices. Drain the pineapple slices, chop them and reserve them.
- Clean the monkfish fillets, season them with salt, flour them and fry them in a pan with oil.
- Once cooked, remove them from the pan and place them in a serving dish.
- Put the oil in the pan and sauté the onion strips in it over low heat until golden.
- Add the pineapple chunks and sauté it for a few minutes as well. Remove everything and in the remaining fat, fry the garlic. When they start to take on color, add the vinegar, onion and pineapple.
- Give it a few turns so that everything is well mixed and pour it over the monkfish fillets.
- Serve it immediately.
