Ingredients to make Pasta with roasted vegetables:
- 1 unit of Eggplant
- 1 zucchini unit
- 2 units of red pepper
- 3 units of tomato
- 6 basil leaves
- 3 bay leaves
- 2 tablespoons of Oil
- 1 pinch of salt
- ½ lemon unit (zest)
- 320 grams of Pasta
- Almond Sauce
- 1 handful of fresh Basil
- 1 handful of parsley
- 1 handful of arugula
- 40 grams of Almonds
- 1 tablespoon lemon juice
- 1 jet of Oil
How to make Pasta with Roasted Vegetables:
- The first step in preparing the roasted vegetable pasta with almond sauce will be to prepare the ingredients.
- To do this, cut into cubes of about 2 cm. approximately the aborigine, the zucchini and the peppers, all this without peeling.
- Tomatoes, on the other hand, in more or less large pieces.
- Next, mix the already cut vegetableswith the chopped basil leaves, the laurel, the oil, the salt and the lemon zest.
- Use a large bowl to mix all the ingredients well.
- Next, place the mixture on a baking tray previously lined with parchment paper. Then, bake in the preheated oven at full temperature for 20 to 30 minutesor until the vegetables are done and starting to brown.
- Meanwhile, you can prepare the almond sauce. To do this, finely chop all the ingredients, including the unpeeled almonds.
- Use a knife instead of an electric utensil, this way you will get the sauce to have different textures thanks to the uneven pieces of the almonds.
- The easiest way to do this is by pressing the tip of the knife against the board with one hand and cutting with the other as the knife is rotated.
- Place the almond sauce mixture in a sauce boat and mix with enough oil, a pinch of salt and lemon juice. Correct the seasoning if necessary.
- Separately, prepare the pasta of your choicein the traditional way until al dente. Place a little coarse salt and the bay leaves in the water. The quality of the pasta is important, so be sure to choose carefully.
- Once the pasta is cooked, drain, remove the bay leaves and mix with the roasted vegetables, previously removed from the oven.
- Then add a couple of spoons of the almond sauce and mix well until the pasta are completely soaked in the sauce.
- Serve the pasta with roasted vegetables and almond sauce byadding a little more sauce to the plate and garnishing with fresh basil leaves.
