- 1 green pepper
- 1 spring onion
- 1 red bell pepper
- 100 gr. blanched broad beans

- 1 boiled egg

How to make Monkfish in vinaigrette:
- Cook the monkfish as if you were going to prepare it stretched, that is, with salt and paprika, and then wraps it tightly in aluminum foil.
- Cut the vegetables (pepper and spring onion) into squares or julienne strips and mix them in a bowl with the blanched broad beans.
- Also add the chopped hard-boiled egg, olive oil, vinegar and salt.
- Place the monkfish, cooked and sliced, in a serving dish. Finally, dress with the vinaigrette and decorate the plate with some asparagus.
