Tolosa Red Beans Recipe

Ingredients to make Tolosa Red Beans:

  • 400 grams of red beans from Tools
  • 200 grams of Bacon
  • 4 units of sausages
  • 1 unit of Onion
  • 6 garlic cloves
  • 1 unit of Leek
  • 1 bottle of olive oil
  • 1 unit of Cabbage
  • 1 pinch of salt

How to make red beans from Tools:

1.Wash the beans and bacon well. Put the Tools beans in a thick-bottomed pot, barely covered with cold water, together with the bacon, 1/2 onion and a splash of oil.

2.Leave to boil for a few minutes over high heat, then lower the heat and cook slowly.

3.When they have cooked for about an hour and a half, add the chorizos and cook slowly until the beans are soft; if a lot of water evaporates, add a little more, but make it hot.

4.The cooking time depends a lot on whether the beans are new or old.

5.Cut small the other half onion, leek and garlic.

6.In a saucepan, put a splash of oil, when it is hot, fry the chopped vegetables, let them take on a little color and pour into the pot with the beans.

7.Check the salt point.

8.Serve with boiled cabbage separately.
