Do you feel like eating a delicious cod gratin like those that are recently seen in the best restaurants in the city but you don’t know where to start because you don’t even know how to make cod confit? Well, worry no more because with this step-by-step that we show you will get an exquisite dish of cod confit in the microwave and gratin with homemade mayonnaise to lick your fingers.

In addition to being super easy to prepare, this microwave cod with mayonnaise is delicious thanks to the scented oil with garlic, spices and aromatic herbs that we are going to make. Don’t miss it!

Ingredients to make confit cod in the microwave:

  • 2 cod fillets (approx. 200g each), fresh or frozen
  • 1 bay leaf
  • 2 garlic cloves
  • 1 rosemary branch
  • 1 teaspoon of black peppercorns
  • Extra virgin olive oil to cover
  • For the mayonnaise:
  • 1 pinch of salt
  • 1 egg
  • 1 glass of sunflower oil
  • 1 splash of vinegar or lemon juice (optional)

How to make cod confit in the microwave:

  1. To cook the cod in the microwave it is necessary that it is first defrosted if you have bought it that way, but if you are going to confit the fresh cod then there is no problem. Just make sure beforehand that the cod is at its point of salt, otherwise you will have to desalt it first.
  2. Trick: In principle, frozen cod already comes at its point of salt and is cheaper than fresh.
  3. Once the cod is ready, we dry it well with absorbent paper, put it on a microwave-safe tray and cover it completely with the olive oil. Add the bay leaf, the rosemary sprig, the peppercorns and the peeled garlic and cover the tray with plastic wrap. Then we confit the cod in the microwave for 3 minutes at maximum power (in my case at 900 W).
  4. Trick: What we achieve by covering the tray is that the oil heats up and the steam cooks the cod in the microwave evenly and at a low temperature. In addition, the bay leafs, the rosemary. The pepper and garlic will flavor the oil and give it a touch
  5. When the fish is confit, we take it out of the microwave without burning ourselves, uncover the tray and leave it in there for about 15 minutes to rest and finish the confit (the oil will be between 60 and 90ºC).
  6. Meanwhile, prepare the homemade mayonnaise by placing the oil in the blender, add the whole egg, a pinch of salt and a splash of vinegar or lemon if you like, and without moving the blender, turn it on and make the Mayonnaise.
  7. If you prefer to make cod with aioli in the microwave, you can add two cloves of garlic to the mixture before mixing it or visit this homemade aioli recipe. You can also flavor the mayonnaise with other ingredients to give it a different touch.
  8. Tip: If the mayonnaise is very runny you can bind it by adding a little more oil very little by little and beating at the same time.
  9. Next, we place the cod confit skin side down on another clean tray, cover it with the freshly made mayonnaise and cook it au gratin in the microwave or oven for a few minutes until golden brown.
  10. Trick: It is important to put the appliance with which we are going to gratin it with heat only on the top so that the microwave cod with mayonnaise does not overcook.
