Ingredients to make Mallorcan style fish:
- 400 gr. grouper fillets, also serves hake or other white fish
- At 100 gr. chard
- 100 gr. coarsely chopped parsley
- 50 gr. of leeks
- 50 gr. chives (fried)
- 200 gr. potatoes cut into slices and cooked
- 2 ripe tomatoes
- 25 gr. unsalted toasted almonds
- 2 cloves of garlic (15 gr.)
- 100 ml. of olive oil
- 100 ml. of water or fish brother, you can also use dry white wine
How to make Mallorcan style fish:
- Put the oil in a frying pan, when it is hot add the leeks and spring onions cut into thick julienne strips with the tender green part. Anchor them.
- When they are soft add the tomato cut into small pieces.
- Then add the chard and parsley, minus a tablespoon that will be saved to make the mince, cut into thick julienne strips and cook over low heat.
- With the almonds, the garlic and the tablespoon of parsley make a bite. When the vegetables are cooked add the picada.
- In a baking dish, place the sliced and cooked potatoes, on top, place the fish fillets and on top of it place the vegetables.
- Put in a preheated oven at 175º C. For 20 minutes. Serve at the same source. Note you can replace the water with dry white wine.
