Cannelloni is a dish that is usually prepared for the Christmas and New Year holidays in some parts of Spain. However, cannelloni is a dish that is good at any time of the year and for any occasion, especially when you need to make food for several people. Ingredients to make meat cannelloni with truffle:
- 2 units of turkey breast
- 300 grams of pork
- 300 grams of beef
- 4 units of Chicken liver
- 1 glass of Brandy
- 1 small glass of tomato sauce
- ½ cup of chicken broth
- 1 unit of egg yolk
- 1 sheet of Truffles
- 24 units of cannelloni
- 100 grams of butter
- 60 grams of flour
- 1 cup of grated cheese
- 1 pinch of Salt and Pepper
- 1 pot of béchamel sauce
How to make meat cannelloni with truffle:
- To start preparing the filling for the cannelloni with truffles, the first thing to do is chop the meat. Then, sauté in a pan with oil and butteruntil the meats change color.
- Add the chicken livers, also chopped, to the pan and continue to fry for a few more minutes.
- Next, add the brandy and tomato to the pan mix well and after a few minutes add the chicken broth.
- Let cook over low heat forapproximately 20 minutes and season with salt and pepper.
- Once the meat is cooked, add the egg yolk to the pan and pass all the cannelloni filling through a food processor. Blend everything until you get a homogeneous
- Chop the truffles and mix them, along with the liquid from the can, with the meat paste.
- Continue cooking over low heatfor a few more minutes.
- Remember to reserve a couple of whole truffles for the presentation of the stuffed cannelloni.
- Apart, boil the cannelloniin abundant boiling water with salt.
- Drain and spread on a clean cloth.
- Then fill the cannelloni with the meat and truffle preparation once it has cooled to room temperature.
- Place the cannelloni in a baking dish and bathe with enough béchamel sauce.
- Then spread a good layer of grated cheese, truffle bits and butter.
- Finally, bake the cannelloni stuffed with meat and trufflesfor a few minutes at about 180º C. until the cheese is gratin and golden.
