Huelva-style fish recipe

Ingredients to make Huelva-style fish:

  • 4 mackerel or slices of fresh tuna
  • onion
  • frying peppers
  • fried tomato
  • oil
  • Oregano
  • sweet paprika
  • Saffron
  • White wine
  • salted
  • fish stock cube

How to make Huelva-style fish:

  1. Chop in julienne, 3 medium onions and 2 large peppers.
  2. With the hot pan, add a drizzle of olive oil, the onion, the pepper and a pinch of salt. Sauté over medium heat until the onions are soft.
  3. Add ½ teaspoon of sweet paprika,
  4. 4 tablespoons of fried tomato, a good drizzle of white wine, a pinch of saffron threads and a pinch of oregano.
  5. Let it cook over medium heat with a little of the shredded fish pastilla, until from the first boil.
  6. We cut the mackerels, put them on the oven plate, with a little oil below and above, a drizzle of white wine and salt.
  7. We put it in the oven at 220ºC for 10 minutes.
  8. We take the loins out of the oven, add a little of the onion juice, put it in the oven and leave it for a couple more minutes.
