Ingredients to make Homemade Spinach Ravioli:
For the masses:
- 400g flour
- 4 eggs
- 1 teaspoon salt
- 1 tablespoon oil
For the filling:
- 350 g cottage cheese or ricotta cheese
- 60 g parmesan cheese
- 60g fresh spinach
- 1 egg yolk
- 1 pinch of nutmeg
- 100g zucchini
- salted
- Pepper
- béchamel sauce
- grated cheese to serve
How to make Homemade Spinach Ravioli:
- Put half of the flour in a bowl and put the eggs, salt and oil in the center. Mix with the flour with your fingers and gradually add the rest of the flour.
- Work the ravioli dough on a marble, hitting it, until it is smooth. Form a ball and let rest covered for two hours. Meanwhile, finely chop the spinach
- Mix the remaining ingredients and reserve. Roll out the dough on a floured surface into two thin, equal rectangles. Distribute the filling with the help of a teaspoon and distribute it every 4 cm of distance.
- Brush the spaces between each fill with water and brush the second rectangle on the top face. Cover the filling with it.
- Gently press the spaces where it is going to be cut. And with a corrugated pasta cutter, the ravioli are cut. Let rest. Cook in plenty of salted water. Cook in batches for 20-15 minutes. Drain and serve with béchamel, cheese and gratin.
