- 120 ml of oil
- 500 ccs of lukewarm water with salt
- 180 grams of short and cooked spinach
- 200 grams of quinoa flour
- 1 egg, the yolk
- 1 pinch of pepper
- 1 cup Parmesan cheese
- 1 pinch of salt
How to make homemade quinoa gnocchi:
- Prepare the dough by boiling the water and adding the flour, stirring constantly with a wooden paddle, cook until a uniform thickness is achieved.
- Remove from the heat and add the yolk, spinach and seasonings.
- Extend the dough and cut into circles or cubes, arrange them in a dish to take to the medium oven for 15 minutes with oil and cheese on top.
- You can prepare a Bolognese sauce to fill them, it will be even better.
