If you have ever heard that tofu has no flavor or that eating tofu is boring, this recipe for tofu in teriyaki sauce will convince you otherwise. Teriyaki sauce is a very tasty marinade for all kinds of dishes. It is a sweet sauce that is prepared from miso paste, ginger, garlic and sweetener, for example, agave syrup. This recipe for tofu in sauce is rich in plant-based protein and can be served with white rice or vegetables, for example.
Ingredients to make Tofu in teriyaki sauce:
- 250 grams of tofu
- 200 milliliters of water
- 2 tablespoons of miso paste
- 1 apple or 3 tablespoons of apple juice
- 1 tablespoon of sesame oil
- 1 medium piece of ginger root or 1 tablespoon of ginger juice
- 1 clove garlic
- 2 tablespoons of agave syrup
- 1 tablespoon cornstarch or cornstarch
- 1 teaspoon salt
How to make Tofu in teriyaki sauce:
1.Cut the tofu into medium cubes and boil it in a saucepan with water and a pinch of salt for 20 minutes.
Tip: You can also make the tofu fried in teriyaki sauce instead of boiled if you prefer.
2.To prepare the vegan teriyaki sauce you will need 3 tablespoons or more of apple juice and 1 tablespoon of ginger juice. What I have done is blend an apple and a piece of ginger together in a juicer. You can also grate them on a very fine grater and squeeze with the help of a kitchen cloth.
3.Meanwhile, in another saucepan, put 200 ml of water, the miso paste, the apple and ginger juice, the sesame oil, a very finely chopped clove of garlic and the agave syrup.
4.Heat the mixture and when it comes to a boil, dissolve the cornstarch or cornstarch in a little water and add it. Stir and continue cooking the sauce without stopping stirring until it thickens.
5.Serve the tofu in teriyaki sauce in bowls or plates accompanied by white rice or vegetables.
