Fried Noodles Recipe

Ingredients to make Fried Noodles:

  • 1/4 kilo of fresh prawns
  • 1/4 kilo of dry noodles
  • 2 tablespoons of oil
  • 3 garlic cloves, minced very fine
  • 2 tablespoons chopped red chilli
  • 150 grams of pork cut into thin slices
  • 50 grams of minced young garlic
  • 2 tablespoons of fish sauce
  • 2 tablespoons lime juice
  • 2 teaspoons of brown sugar
  • 2 beaten eggs
  • fresh coriander sprigs
  • 50 grams of chopped roasted peanuts
  • fried onion

How to make Fried Noodles:

  1. Peel the prawns and cut them into small pieces – Soak the noodles in warm water for 12 minutes until soft.
  2. Drain – Put oil in a pan and when very hot, sauté the chilli, garlic and pork for 5 minutes, adding the prawns and stirring for another 5 minutes.
  3. Add the young garlic and the noodles cover the pan and fry everything for 2 minutes.
  4. Add the fish sauce, sugar, lime juice and eggs.
  5. Stir well until everything is hot.
  6. Sprinkle with bean sprouts, peanuts and cilantro on top.
