I had never cooked with fresh pasta before. The difference, during the process, is not great except in the cooking time, but it is noticeable in the final result. I have loved this new experience with this dish of fresh pasta with mushroom sauce, as my brother was recently in Italy and brought me a huge bag of fresh tonnarelli (or fat spaghetti) for me to try. I wanted to take advantage of them and not make any recipe and I prepared a mushroom sauce for pasta without cream to accompany them. They were crazy, just like that 🙂

Ingredients to make Fresh pasta with mushroom sauce:
- Tondarelli or other long fresh pasta
- 1 bag of dried mushrooms
- 1 clove garlic
- 3 tablespoons of Parmesan cheese
- 2 glasses of milk (not very large)
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 pinch of Parsley
- 3 tablespoons of olive oil
How to make Fresh Pasta with Mushroom Sauce:
- First we are going to prepare the mushroom sauce for pasta if cream.
- To do this, we leave the mushrooms to soakfor about 5-10 minutes, or the time indicated on the bag.
- When they are ready, we drain them very well.

- Next, we heat a little oil in a frying pan and brown the minced garlic.
- Add the mushrooms, well drained, and sauté. Let’s do a few minutes. Then add the cheese and then the milk.
- We can add a little pepper and parsley if we feel like it. Let the boletus pasta sauce cook for about ten minutes, until part of the liquid is consumed.
- Let it rest a bit and when it is not too hot, blend themushroom sauce for pasta with a blender.
- As you can see, I haven’t added salt because the mushrooms are already quite tasty and the cheese too. You can try at this point and correct to taste.
- Now we cook the pasta.
- Being fresh, it takes less time. About half, or a little more. It is best to go looking. I had it like 5-6 minutes.
- When it is ready, we strain it and go through the cold water jet. We serve it on a plate and add the sauce on top.
