This recipe is perfect for those who love cheese because it combines strong flavors and is also crunchy due to the pizza dough. The four cheese pizza is ideal to eat accompanied by a red wine since these have a high degree of acidity and are very aromatic, which will enhance the intense flavor of the cheeses in our homemade pizza.
Ingredients to make Four Cheese Pizza:

- 5 grams of dry yeast
- 2 tablespoons of olive oil
- 100 milliliters of Water

- 30 grams of Gruyere cheese

How to make Four Cheese Pizza:
- In a bowl add the lukewarm water with the dry yeast and a pinch of sugar, wait 5 minutes until the yeast is activated.
- Separately, in a bowl add the wheat flour, make a volcano with it and sprinkle the salt on top (it is important that the salt does not directly touch the yeast as it can deactivate it and the dough will not rise) and in the center add the activated yeast and the olive oil.
- Mix everything by adding flour in the center of the volcano little by little. When we have an even mixture, knead for 15 minutesuntil smooth and homogeneous dough is obtained.
- In a floured bowl, add the dough with a damp cloth on it and leave it in a warm area, wait for the dough to rise, approximately 2 hours.
- After this time, on a floured surface, degas the pizza dough with your fingers (remove all the gas that was obtained during proofing), stretch the dough and fold the corners inwards.
- With a brush add a little of the Neapolitan sauce and prick it so that it does not inflate in the oven, pre-bake for 5 minutes at 200º
- It’s time to add more Neapolitan sauce and the 4 kinds of grated cheese, take to the oven for 10 more minutes.
- You can vary any of the types of cheese for your favorite option, such as Roquefort or gorgonzola.
- Finally when the four cheese pizzais ready, slice and enjoy.
