Ingredients to make Tofu Fillets:

  • 4 slices of Tofu (1cm thick approx.)
  • 1 jet of olive oil
  • ½ cup of water (120 milliliters)
  • ½ unit of beef broth cube or Marmite
  • 1 teaspoon soy sauce
  • 1 unit of Leek
  • ½ small glass of white wine
  • 1 pinch of salt and pepper
  • 1 cup of rice flour
  • sunflower oil for frying

How to make Tofu Fillets:

1.To start preparing this vegan recipe with tofu, the first step is to get the ingredients ready. To do this, cut the white part of the leak into thick slices and the green part, which is tenderer, cut it into strips. Also reserve the roots of 2 or 3 leeks, discarding the black part and washing the rest very well.

2.Drain the tofu slices well and blot up excess moisture with absorbent paper. Then, lightly toast the tofu in a pan with oil, cook on both sides.

3.Next, add the soy sauce and the hot water with the dissolved bouillon cube to the pan. Remember that you can use a beef bouillon cube or substitute it for Marmite. Cook the whole for a few minutes until all the liquid is consumed and turn the tofu slices to absorb sauce on both sides. Remove the tofu and reserve the heat.

4.Add a little more oil to the pan and fry all the leek, white and green parts (except the roots), over medium heat.

5.When the leek begins to soften, return the soybean fillets to the pan along with the wine. Season everything to taste and let all the alcohol evaporates so that a delicious sauce forms.

Tip: If you don’t want to use wine, you can substitute the same amount of water mixed with a little balsamic vinegar.

6.Meanwhile, recover the leek roots and pass them through the flour to make a batter. You can use any type of special flour for batter or as we have put in the ingredients, rice flour).

7.Shake the roots to remove excess flour and fry this part of the leek in hot oil until crisp. Remember to watch that the temperature of the oil remains moderate so that the roots do not burn prematurely.

8.Finally, serve the tofu fillets with the sautéed leek and accompany with the crispy roots and if you want an extra garnish you can include a little sweet potato puree. And if you like to include soy in your diet, you can try the recipe for tofu with tomato.
