Ingredients to make Hake in almond sauce:
- 1 kilogram of fresh hake
- 100 grams of almonds
- 600 grams of durum wheat
- 1 leek
- 2 carrots
- 1 red onion
- 1 green pepper
- 1 splash of olive oil
- 1 pinch of salt
- 1 pinch of pepper
- 25 grams of wheat flour
How to make Hake in almond sauce:
- Place the almonds in a pot of boiling water, cook them for 1 minute and drain them. This type of cooking is known as “blanching” and makes it easier to remove the skin.
- Peel the almonds one by one and reserve them. Although it seems a somewhat heavy step because it is necessary to peel them one by one, the truth is that it will only take a few minutes. However, you can always make the almond sauce leaving the skin on.
- Tip: You can also peel the almonds by placing them on a dry cloth and rubbing them all together.
- Clean the hake and save the discarded parts, such as the skin, fins or spine to make a fish stock, which will be the base of the sauce.
- Put the peeled and chopped carrot, the cut leek and half an onion cut into large pieces in a pot with cold water. Also add the discarded parts of the fish and heat everything over high heat until it boils. When it starts to boil, cook for 20 minutes over medium-low heat. - Cook the durum wheat in another pot with boiling water for 25 minutes, or until you notice that it is tender.
