Ingredients to make Grouper with aioli:
- for 4 people
- 800 grams of grouper in fillets
- 1 and a half kilo of potatoes
- 1 cup mayonnaise (with 1 crushed garlic clove)
- 1 deciliter of virgin olive oil
- salted
- pepper to taste
How to make Grouper with aioli:
- Peel the potatoes and cut them into squares as for salad.
- Cook the potatoes with water and salt until soft and tender.
- Once cooked, remove them from the heat, drain them in a colander and sprinkle them with chopped parsley.
- Then we spray them with olive oil and garlic mayonnaise (quick aioli) and reserve them.
- Heat a non-stick frying pan, lightly oil and place the grouper slices on the griddle.
- Cook the grouper over low heat on both sides, sprinkling with lemon a few minutes before finishing cooking.
- We serve the grouper fillets with the potatoes cooked and sauced with virgin olive oil and aioli sauce.
