Ingredients to make Grouper or Dorado in Chive Sauce:
- 2 kg. loin of grouper or gold
- 4 sprigs of chives
- 6 tablespoons of soy sauce
- 1 cup of oil
- 1 tablespoon finely chopped ginger root
- pepper to taste
How to make Grouper or Dorado in Chive Sauce:
- Ask the fishmonger for the whole fish and ask him to remove the loins. They should be two thick pieces of fish.
- Put the fish to cook in a bain-marie, taking care not to overcook it.
- Chop the chives and place in an ovenproof container along with the soy sauce, ginger and pepper.
- Heat the oil to the point of frying and pour it into the refractory over the mixture.
- Arrange the fish fillets on a serving tray and drizzle with the sauce, reserving a little to bring to the table. Serve it and accompany it with white rice.
