Ingredients to make grouper fillets in wine:
- 1 kilo of grouper fillet
- 100 grams of chives
- 3 deciliters of white wine
- a glass of milk
- 4 tablespoons of olive oil
- white pepper
- a few sprigs of parsley

How to make grouper fillets in wine:
- Chop the spring onion into brounoisse (small mince), and cook it in a pan over low heat with 2 tablespoons of olive oil until soft and set aside.
- Preheat the oven to 180º and place the cooked onion in a baking dish and the salt and pepper grouper fillets on top, add the white wine and bake for 15 minutes.
- After this time has elapsed and the grouper has been cooked, the spring onion and the juices from the grouper are transferred to a casserole that we put on the heat together with the milk and let it boil and thicken for a few minutes.
- Strain the sauce through a strainer, sprinkle with a little chopped parsley and season with salt.
- Sauce the hot grouper fillets with this sauce and serve immediately.
