How to make Grilled Sardines:
- The sardine is a blue fish rich in Omega 3, iron and calcium. On Thursday when I went shopping I saw the sardines at €2.95 per kilo, they looked great. Buy a kilo to grill them this Saturday. We have accompanied them with migas de pastor, escalivada and an onion salad. The recipe is for two people prepare the barbecue fire and let the embers cook. (If you don’t have a barbecue, the option is to make them on an electric grill or in the oven) Clean the sardines well. Peel them, wash them and empty them. Put them in a drainer so that they release the excess water from having cleaned them. Salt the sardines. Spread them out on the grill.
- When you see that the grill is ready, put the sardines on and let them cook by turning over the grill when you see that they are already on one side. Watch that they are not overcooked as they would remain dry. Serve hot and eat right away. They can be eaten with your hands. Accompany with a good wine.
