Ingredients to make Vegetable Rice:

  1. 1 cup medium grain rice
  2. 1 unit of Carrot
  3. 50 grams of Broccoli
  4. 1 unit of green zucchini
  5. 1 unit of red pepper
  6. 1 unit of purple onion
  7. 2 garlic cloves
  8. 2 cups of vegetable broth
  9. 30 milliliters of sunflower oil
  10. 1 pinch of salt
  11. 1 pinch of Pepper

How to make Vegetable Rice:

  • Before making this vegetarian recipe, the first step is to get all the ingredients ready.
  • In a pot with oil, fry the vegetables according to their hardness, first add the finely chopped carrot and onion.
  • When the onion is translucent, add the red pepper, the green zucchini, the marinated garlic and the broccoli, all finely chopped. Cook for 5 minutes, add salt and pepper.
  • Add the rice and mix everything very well, it is time to add the two cups of vegetable broth. When it is boiling, correct the flavor with salt, wait for the water to evaporate and cover, cook for 25 minutes over low heat.
  • Serve and enjoy the hotelman rice, this recipe is ideal to eat at lunchtime accompanied by chicken with mushroom sauce or tofu burgers.
