  1. 2 units of Carrot
  2. 8 units of Mushrooms
  3. 1 unit of chives
  4. 1 unit of leek
  5. 1 unit of green pepper
  6. 1 unit of yellow pepper
  7. 1 pinch of salt
  8. 1 pinch of ground black pepper
  9. 3 tablespoons of olive oil
  10. 120 grams of round rice
  11. 260 milliliters of Water

How to make Vegetable and Mushroom Risotto:

  • We gather all the ingredients to make the vegan risotto with vegetables and mushrooms.
  • In a pot, fry the finely chopped leek and spring onion.
  • Next we add the carrot in squares and the peppers cut as seen in the image of the step. Add a little salt and ground black pepper. Let cook for 5 minutes over medium heat.
  • Add the quartered mushrooms and cook for 3 minutes.
  • Add the rice, mix it with the vegetables, add a little more salt and stir. We cook it for two minutes.
  • To cook the risotto we have to add the warm water in three times and move. The creamy consistency of the risotto is achieved by adding the water little by little and letting it simmer. It is necessary to put twice as much water as rice and you can always put a little more if the grain is still lasting after you have finished all the water.
