  • ½ cup yellow cornmeal
  • 2 cans of Tuna
  • 1 cup of Quinoa
  • 1 unit of white onion
  • 1 glass of water

How to make Quinoa Empanadas:

  1. For these delicious quinoa empanadas, the first thing you should do is prepare all the ingredients, these are for 7 empanadas.
  2. In a very hot frying pan, fry the chopped onion in squares for 3 minutes over medium heat.
  3. Add the tuna and quinoa, previously cooked in water, and cook the whole for 3 more minutes.
  4. Remember that quinoa is a cereal with a lot of food and very easy to prepare, you just have to cook it in water until the grains open, you can get this cereal in health food stores.
  5. Separately, mix the cornmeal with a little salt and add the water. Knead until the dough is homogeneous, as seen in the image.
  6. Roll out the dough, place the tuna and quinoa filling and form the empanadas. If you have a mold, do it with it, if you can’t do it with a glass.
  7. Remember to seal the edges well with a fork.
  8. Fry in abundant hot oil until golden. Then, leave them on absorbent kitchen paper to remove excess oil.
  9. Serve and taste these delicious quinoa empanadas.
  10. Remember that you can vary the filling to your liking and instead of tuna, make meat patties or shrimp patties, for example.
