We are going to prepare a tasty quinoa and vegetable risotto with coconut milk, although if you prefer you can use regular milk or cream cheese. Quinoa dishes with vegetables always taste good, and if you combine them in a preparation as creamy as this vegetarian quinoa risotto… they are divine!

Ingredients to make Quinoa and Vegetable Risotto:

  • 1 cup of quinoa or quinoa grain
  • 2 cups of water (480 milliliters)
  • 2 cloves
  • 3 cardamom seeds
  • 1 dessert spoon of curry powder
  • Salt to taste
  • ½ carrot, chopped
  • ½ onion, chopped
  • 100 milliliters of coconut milk
  • Olive oil
  • Vegan or Parmesan cheese (optional)
  • To decorate:
  • chopped chives
  • Cashew/Cashew Nuts

How to make Quinoa and Vegetable Risotto:

  1. Cook the quinoa with the water together with the cloves, the cardamom, the curry powder, the chopped carrots and salt to taste.
  2.  Place a pot with all that on the fire and cook from cold to medium heat until the water has completely dried. Then turn off the heat and reserve.
  3. Tip: Remember that it is very important to wash the quinoa before cooking it.
  4. It is ready when it becomes completely transparent in the center and with a visible white filament on one side.
  5. In another pan, sauté the chopped onion with a little olive oil.
  6. Add the cooked quinoa with the carrot to the poached onion and mix well
  7. Finally, add the coconut milk, stir and let the vegetarian quinoa risotto cook until it is very creamy. If necessary, rectify the salt or add a little more of some spices.
  8. Tip: Add a handful of vegan or Parmesan cheese to this step at the end of cooking if you like and stir to make it even creamier.
  9. Garnish the quinoa and vegetable risotto with chopped chives and cashews or other nuts if you like and enjoy this easy and nutritious meal.
