- To start making our quinoa and spinach croquettes recipe, the first step is to prepare all the ingredients.
- This is a great alternative for people who don’t eat meat or who are vegetarians.
- In a bowl add the spinach and white onion.
- Process until well integrated and a uniform mass is obtained.
- Add a tablespoon of bread crumbs, salt, pepper together with half of the cooked quinoa, a little garlic paste.
- The result should be a compact and full-bodied dough, if you wish you can add a tablespoon of olive oil.
- Process until the ingredients are well integrated.
- If you want the quinoa and spinach croquettes to be vegan just make sure the breadcrumb is vegan.
- Finally add the remaining cooked quinoa. This time we are not going to process, mix everything with the help of a spatula.
- Reserve our mixture in the fridge or refrigerator for approximately 30 minutes.
- After this time, we are ready to cook the green quinoa croquettes.
- To do this, first grease a refractory pan and with the help of a spoon, place the most rounded portions possible so that they are the croquettes.

- Cook in the oven at 160ºC. For approximately 20 to 25 minutes.
- You can also make them fried, but if you want to take care of your diet and cook with less fat, I recommend doing them like I did, in the oven.
