We are going to prepare a delicious mushroom risotto, a traditional dish of Italian cuisine that is increasingly widespread throughout the world due to its creaminess and flavor. Of course, we will do it following the Italian recipe, so we will not use cream. Risotto is a dish that is characterized by cooking the rice for longer than usual, resulting in a very creamy rice. This dish admits many variants, so it can be made with vegetables, with meat, with cheeses, with mushrooms…, since it is excellent in any way. However, this time we are going to focus on the recipe made with mushrooms.
Ingredients to make Mushroom Risotto:
- 350 grams of arborio rice
- 150 grams of mushrooms
- 100 milliliters of white wine
- 1 piece of onion
- 1½ liters of vegetable broth
- 1 splash of olive oil
- 1 pinch of salt
- 50 grams of grated Parmesan cheese
- 1 pinch of black pepper
How to make Mushroom Risotto:
- To start making the easy mushroom risotto recipe, first finely peel the onion, clean the mushrooms to remove all the dirt and cut them into medium pieces, as they get smaller when cooked.
- Heat a little oil in a saucepan. When hot, add the onion, fry for a few minutes and add the mushrooms. Sauté until the mushrooms are golden brown.
- Tip: if you feel like preparing mushroom and chicken, bacon, ham or shrimp risotto, now is the time to add the chosen ingredient to sauté it.
- Heat the vegetable broth. When the mushrooms are ready, add the rice, stir, pour the white wine and let it reduce for a few minutes.
- Then, pour the broth little by little and stir the rice so that it cooks while it becomes creamy. As it dries, add more broth.
- After about 15 minutes, taste the rice to see how tender it is and, if necessary, add a little salt and pepper.
- Grate the Parmesan cheese just before adding it to the rice.
- To make the vegan mushroom risotto, use a vegan cheese like these:
- vegan goat cheese
- vegan chickpea cheese
- When the rice is to your liking, add the grated cheese little by little until it is to your liking. The cheese will give the mushroom risotto more creaminess and more flavor.
- Stir until the cheese dissolves and adds that extra creaminess.
- Tip: at this point you can add a tablespoon of butter to enhance the flavor.
- Once the grated Parmesan cheese is mixed in, taste the rice to see if it needs salt, even though the cheese is already there.
- Add a touch of pepper if necessary and turn off the heat. Let the preparation rest for about 5 minutes with the casserole covered and serve immediately very hot.
- You can put more cheese on a plate for diners to serve themselves when eating this delicious mushroom risotto. Ready to eat!
