Mushroom and Serrano ham risotto recipe

It is a rice with mushrooms and Italian-style ham with sweet gorgonzola cheese and a vegetable broth that gives it a softer touch than the typical flavor of risotto with ham and mushrooms. Also, you can substitute the mushrooms for another type of mushroom if you like them better, no problem.

Ingredients to make Risotto with mushrooms and Serrano ham:

  • 170 grams of Rice for risotto
  • 100 grams of Serrano ham
  • 180 grams of Mushrooms or other mushrooms
  • 100 grams of sweet gorgonzola cheese
  • 1 liter of vegetable broth
  • 1 splash of white wine
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of ground garlic powder
  • 1 splash of extra virgin olive oil

How to make Risotto with mushrooms and Serrano ham:

  1. To start making this mushroom and Serrano ham risotto, clean and slice the mushrooms.
  2.  In a deep frying pan put a little olive oil and when it is hot add the mushrooms and sauté them.
  3. When they are almost done, add the diced Serrano ham and keep on the heat for a few more minutes.
  4. Trick: We can replace the fresh mushrooms with canned mushrooms and it will take less time to prepare the recipe.
  5. Remove the ingredients from the pan with the help of a slotted spoon and leave the juice they have released.
  6. We put the pan back on the fire, add the rice and give it a spin in that juice.
  7. We incorporate approximately a third or a little more of the vegetable broth and we cook. As we see that the rice is dry, we taste it and gradually add the broth that is enough to make it.
  8. Tip: To make a good ham and mushroom risotto, the trick is to add the broth little by little as needed and to stir the rice quite frequently so that it releases the starch and becomes syrupy.
  9. When the rice is almost ready, add a splash of white wine, the mushrooms and ham, pepper and ground garlic to taste and a few minutes later the gorgonzola cheese cut into pieces.
  10. Stir until the cheese has melted and the rice with mushrooms and ham is creamy.
  11. We immediately serve the mushroom and Serrano ham risotto and enjoy!
