Thermomix recipe: Rice and Fish Paella

Ingredients to make Thermomix: rice and fish paella:

  1. For the fumet:
  2. 250 grams of peeled prawns reserving the shells
  3. 250 grams of water
  4. 50g orange juice
  5. 50g lemon juice
  6. 500g of water
  7. the reserved fumet liquid
  8. 4 garlic cloves
  9. 2 1/2 stock cubes
  10. 6 sprigs of parsley
  11. saffron
  12. cayenne (optional)
  13. For the sauce:
  14. 100g of oil
  15. 100 g green pepper
  16. 100 g red pepper
  17. 250 g crushed natural tomato
  18. 2 garlic cloves
  19. 150g frozen green beans, chopped
  20. 150g frozen artichokes, quartered
  21. 100 g approx of squid cut into thin strips
  22. 100 g approx diced chicken breasts
  23. 350g of rice

How to make Thermomix: rice and fish paella:

  • Put the shrimp shells and the water in the glass.
  • Program 5 min, vel 4. Take them out, strain them and reserve them. Put the garlic, parsley and the pills in the clean glass and crush on vel 6 to 8.
  • Add the rest of the ingredients from this step and mix for a few seconds at maximum speed.
  • Take the preparation out of the glass and reserve it put the ingredients of step 3 in the glass.
  • Chop for 6 to 8 seconds on speed 3 and 1/2.
  • Program after 5 minutes at 100º vel 1 put the butterfly on the blades.
  • Next, add the ingredients of step 4 and program 7 min, 100º vel 1 add the rice and program 3 min, 100º, vel.
  • Add the liquid from step 2 that we had reserved and program 12 minutes at 100º on speed 1.
  • When there are 5 minutes left, increase the temperature to Varoma (if you see that it splashes a lot, put the inverted basket on the lid).
  • When done, add the reserved shrimp bodies.
  • Let it rest in the machine for 2 or 3 minutes. Then take it out to a large serving dish and serve quickly.
