Soupy Rice with Squid Recipe

Ingredients to make soupy rice with squid:

  1. 500 grams of squid rings
  2. 120 grams of white onion
  3. 1 teaspoon of garlic paste
  4. 1 glass of white wine
  5. 180 grams of Tomato
  6. 2 teaspoons of fresh parsley
  7. 300 grams of cooked white rice
  8. 1 glass of Brandy
  9. 1 teaspoon of oregano
  10. 80 milliliters of Cream of milk
  11. 2 glasses of seafood broth

How to make soupy rice with squid:

  • The first step to make the soupy rice with squid recipe is to prepare all the ingredients. First we are going to make the calamari sauce.
  • In a pan add the finely chopped tomato and onion with a little salt, black pepper and garlic paste to taste. Sauté well until you get a base sauce.
  • Add the squid rings, add the white wine and cook for five minutes. Then, turn off the heat to prevent the seafood from overcooking.
  • Now prepare the ingredients to start cooking the soupy rice.
  • Bring a deep pot over medium heat with a teaspoon of olive oil. When it’s hot, add the white rice.
  • Add the Brandy, the seafood broth and parsley. Let cook for about 10 minutes over medium heat.
  • Add the squid with its base sauce and add the oregano, let it keep for five to eight minutes. Rectify the flavor, if you wish you can add a little more Brandy, as this type of liquor gives an exquisite flavor to the recipe.
  • Turn off the heat and add the milk cream to give a creamy touch to the soupy rice with squid.
  • Trick: You can replace the milk cream with coconut milk, and remember you can add more seafood of your choice.
  • Serve the soupy rice with calamari adding a little Parmesan cheese on top.
