Sushi is one of the best-known dishes of Japanese cuisine worldwide and the favorite food of many people. There are many varieties of sushi, but they generally consist of rolled-up bites of rice, seaweed, fish, and vegetables. Sushi filling can be very varied and these makis and uramakis that I have prepared are filled with fruit and vegetables. The process of cooking and preparing sushi rice is an art, therefore, it is very laborious, and so I bring you a homemade vegan sushi recipe a little more simplified so that everyone can prepare it.
Ingredients to make homemade vegan Sushi:
- 5 sheets of nori seaweed
- 1 cup of sushi rice
- 25 milliliters of rice vinegar
- 10 grams of sugar
- 1 banana
- 2 pineapple slices
- 1 avocado
- 1 carrot
- 1 cup of water (240 milliliters)
- 15 grams of salt
- ½ green bell pepper
How to make homemade vegan sushi:
- Wash the sushi rice in water by rubbing it with your hands in a strainer until the starch is removed.
- Changing the water several times until it comes out clear or do it directly under the water tap.
- Next, put the rice in a saucepan and cover it with water (the same amount of water as rice).
- Cook the rice with the lid on over medium heat for 2 minutes, lower the heat and let it boil for another 12 minutes over low heat.
- Turn off the stove and let the rice rest with the lid on for another 15 minutes.
- Let it cool to room temperature.
- Prepare the “sushi-zu” or topping for the rice by slightly heating the rice vinegar and dissolving the sugar and salt in it.
- Let it cool and mix with the cooked rice.
- Prepare the vegetables and fruit for homemade vegan sushi by cutting them into julienne strips or long slices.
- Place the bamboo mat on a flat surface and a piece of transparent film on top (for ease).
- Place a sheet of nori seaweed on top, cover it with a layer of rice about half a centimeter thick, leaving the upper end free.
- Place the fruit and vegetable slices or sticks along the bottom end of the seaweed.
- Choose the combinations of vegetarian sushi that you like the most, these are the ones I have made: banana and pineapple make; banana, pineapple and avocado make and carrot, avocado and green pepper remake.
- Carefully roll up the sheet of nori seaweed with the help of the mat, squeezing a little so that it becomes a compact roll and does not fall apart.
- Brush the top end with water and squeeze the roll so the seaweed sticks.
- To make the uramaki, simply change the order of the layers: first place the rice on the mat, then the seaweed on top and the filling along the bottom edge.
- Serve homemade vegan sushi with soy sauce, a dash of wasabi, or marinated ginger.
