Ingredients to make Fried Polenta Sticks:
- Polenta
- 850 milliliters of Water
- 1 pinch of salt
- 230 grams of corn semolina
- 10 tablespoons of grated coconut
- Salad
- 1 unit of fresh Papaya
- 1 unit of onion
- 1 unit of green pepper
- 1 unit of Lemon (zest and juice)
- 1 pinch of salt and black pepper
- 1 tablespoon fresh Parsley or Cilantro
How to make Fried Polenta Sticks:
- To make the polenta, the first step is to heat the water with a little salt and when it starts to boil, add the semolina and the coconut.
- Let everything cook together, stirring constantly, for about 3 minutes until you get a soft dough that shows the bottom of the saucepan.
- Trick: Avoid using very fine semolina so that the polenta is well compacted and the sticks do not fall apart
- Pour the polenta mixture into a rectangular container, previously greased with oil, and smooth the surface with a wet spoon or spatula.
- Let cool until set overnight or at least 4 hours.
- When it is cold and compact, unmold the polenta and cut rectangular pieces in the shape of canes or squares.
- To make the garnish salad, chop the papaya and reserve the seeds for decoration. If you can’t find this fruit, you can substitute it with a pear.
- Finely chop the onion and paprika and mix everything with the rest of the ingredients.
- Separately, fry the polenta sticks in hot sunflower oil until golden brown and crisp.
- Make sure that the oil temperature is medium-high to prevent the sticks from burning before they are golden and tender.
- Remove excess oil with absorbent paper.
- Serve the fried Caribbean corn and coconut with the salad and enjoy either as a main course or as an appetizer.
