Chicken and Mushroom Risotto Recipe

Ingredients to make Chicken Mushroom Risotto:

  • 400 grams of Rice
  • 1 cup of white wine
  • 1 package of mushrooms
  • 1 tablespoon of butter
  • 1 jet of olive oil
  • 500 grams of Chicken
  • 1 onion
  • 2 cloves of garlic
  • 1 pound of stock or chicken broth
  • 1 pinch of salt and pepper
  • 1 cup of Parmesan cheese

How to make Chicken Mushroom Risotto:

  1. We start by getting all the ingredients ready.
  2. The chicken must be cut into small pieces and can be breast or thigh, to taste.
  3. The bottom can be homemade and you can make it yourself with the basic chicken broth recipe. As for the mushrooms, a cup of filleted mushrooms as seen in the photo will suffice.
  4. We start cooking and add a splash of olive oil and butter to the pot to fry the finely chopped onion.
  5. Add the garlic and let it fry for a couple of minutes before adding the chicken.
  6. Sauté and seal.
  7. When we see that the chicken begins to brown, add the mushrooms and stir. Then we add the white wine and let the alcohol consume, keeping it cooking over medium heat.
  8. Next comes the time to add the rice. Stir and add the chicken stock as the rice dries.
  9. The secret of a good risotto is to add the liquid little by little.
  10. Season with salt and pepper and continue stirring.
  11. To finish, we add the Parmesan cheese and that’s it.
  12. We serve the chicken risotto with mushrooms on each plate and decorate with a little more Parmesan cheese on top and parsley. To enjoy!
