Ingredients to make stewed lentils with chorizo and black pudding:
- 1 kilogram of cooked and peeled shrimp
- ½ kilogram of Chihuahua, Montego or Oaxaca cheese
- ½ kilogram of Bacon
- 1 unit of Carrot
- 1 unit of Leek
- 1 unit of green pepper
- ½ unit of red pepper
- 1 unit of black pudding
- 1 unit of Stewing Chorizo (to taste, in 1/2 cm slices)
- 1 package of Bacon (if it is from the Serrano ham cuts, it will be richer)
- 1 unit of sweet paprika
- 4 tablespoons of olive oil
- 1 pinch of salt
How to make stewed lentils with chorizo and black pudding:
1.We leave the lentils to soak the night before so that the legume rehydrates, unless they are “pardon”, very small, which do not require soaking.
2.Chop the onion, carrot and leek, put it all in the pot along with the rest of the ingredients, cover it with water and cover the pot, putting it on high heat until it begins to boil.
Tip: You can also add pieces of meat and other vegetables.
3.When, we reduce the fire to a minimum and let it cook for 1 hour. Halfway through cooking, remove the blood sausage and reserve for last.
4.Before serving we make a simple refried. Put oil in a frying pan with a clove of garlic and when it is hot add a teaspoon of paprika, stir until it begins to change color (it becomes darker), and pour it over the stewed lentils with chorizo .
5.Remove the peppers and add the chopped black pudding and serve. These lentils with chorizo and black pudding are ideal for cold days, accompanied by white rice.
