Ingredients to make Caribbean Coconut Rice:
- 2 cups of shredded coconut
- 2 cups of rice
- 2 tablespoons brown sugar
- 1 teaspoon salt
How to make Caribbean Coconut Rice:
- Before making this typical coconut rice from the Colombian coast, the first step is to prepare all the ingredients.
- To make the titter (the caramel that gives flavor and color to the rice), in a pot add the first coconut milk that is obtained by blending 1/2 cup of grated coconut with 2 cups of warm water and straining it, cook over high heat with 2 tablespoons of brown sugar.
- Cook until you get a dark caramel, which forms lumps.
- Separately, blend the remaining coconut with 4 cups of warm water for a few minutes.
- Strain the mixture very well and reserve the coconut milk.
- Once the titter is done, immediately add the 4 cups of coconut milk, stir with a wooden spoon until the titter is dissolved, add a teaspoon of salt and when it boils add 2 cups of rice, cook over medium heat.
- When the coconut milk evaporates, cover the rice and cook over low heat for 20 minutes.
- Serve and enjoy, if you want to add some raisins to the rice, this dish is ideal to accompany fried fish with fresh salads.
