- 2 cups of mashed potatoes
- 2 cups of shredded salted cod
- ½ cup breadcrumbs
- 1 egg
- 2 garlic cloves
- 1 small onion
- 2 tablespoons olive oil
- chopped parsley to taste
- Salt to taste
- Mild oil for frying
How to make cod and potato fritters without flour:
- To make the mashed potatoes, cook them in the pressure cooker for 15 minutes or until they are well cooked. Make the puree and reserve.
- Trick: Cut the potatoes into pieces so they cook faster.
- Cook the already desalted cod and change the water once. That is, place the fish in a pot with water to cover and once it boils, throw away the water and add again. When it boils again, turn off the heat, drain the fish well and set it aside.
- Make a sauce with the olive oil, the onion and the chopped garlic. This will add much more flavor to the cod with potato balls.
- In a bowl add the mashed potatoes, the crumbled cod, the well-done sauce and the rest of the ingredients of the potato and cod fritters recipe. Mix well until a homogeneous mass is left.
