Ingredients to make Fish in sweet and sour sauce:
- 1 unit of whole fish (700 gr. Snapper, Dorada, Sargo, etc.)
- 1 unit of chopped tomato without skin or seeds
- 2 tablespoons of chopped pineapple
- 2 tablespoons of chopped Cucumber
- 1 unit of chopped red pepper
- ½ unit of chopped onion
- 2 garlic cloves finely chopped
- 1 cup cornstarch (overflow)
- Sweet and sour sauce
- 1 tablespoon corn flour
- 1 tablespoon of Water (to dissolve the cornstarch)
- 3 tablespoons tomato paste
- 2 tablespoons of Vinegar
- 2 tablespoons of Sugar
- 1 pinch of salt
- 6 tablespoons of Water
How to make Fish in sweet and sour sauce:
- Once the fish is clean, dry the fish well, inside and out, salt it and pass it through cornstarch.
- Give it a few cuts on the presentation surface so that we make diamonds, but the cuts do not reach the spine, to prevent the meat from coming off.
- Fry the fish until it takes on a nice color, remove it to the serving dish
- Sauté the onion and garlic in 2 tablespoons of oil, add the tomato, pineapple, cucumber and pepper, sauté everything for a few seconds.
- Add the ingredients of the sauce, except the cornstarch and water, when it starts to boil add the cornstarch to the water and cook it a little until the sauce thickens.
- Pour the sauce over the fish and serve.
